Colombia Gaitania “Los Pijaos De Tolima” Home Roast Thoughts




  • I am back with more home roasts. Monday I decided to fire up my Behmor 1600 and roast some Colombia Gaitania “Los Pijaos de Tolima” from Sweet Maria’s. This coffee has a

    Raisiny dried fruit sweetness, plum, clove, and cardamom spice in the finish. Extremely balanced between brightness and body.

    They recommend a City+ to FC roast, but mine landed more to a City Roast. I meant to go longer, but it stopped me after 14 minutes. It started at 12 minutes and I added an extra two minutes which is the maximum amount of minutes you can add.



    There’s this pleasing dried fruit aroma coming at me with such a pleasing sweetness. I do detect raisin and plum notes in the coffee.

    The notes in the coffee reminds me of an Ethiopian Yirgacheffe with more of a dried fruit note in the mix. I am getting a nice acidity coming at me. The raisin and plum notes are very noticeable in the coffee. The brightness in the coffee and the overall body of the coffee is nicely balanced.

    As the coffee cools the taste is even better. I wasn’t expecting to like my own roasted coffee so much.
