Cooking With Coffee: Barbecued Pork Tenderloin

    What’s better than drinking coffee? Cooking with coffee that is. If you are like me, you are finding more ways to enjoy that lovely brew. I’ve got a new coffee recipe that I have found online, and it is absolutely delicious. Let’s just say that Coffee Beef Stew now has a run for its money.

    I found this recipe, Barbecued Pork Tenderloin online and knew I had to check it out.

    Below is the ingredient list. I tweaked the recipe just a bit. Actually, I tweaked it quite a bit. You can find the original recipe here. The recipe talks about it being done on a grill, but I used an oven due to the cold weather. Either way is fine.

    Ingredients

    Done for a 4-5lb piece of meat. Adjust ingredient amount as needed.
    - 2 cups strong brewed coffee (I used Peet’s French Roast)
    - 3 tablespoons cider vinegar
    - 2 tablespoons dijon mustard
    - Trimmed pork tenderloin
    - 1/4 cup barbecue sauce
    - Adams steak rub (You can find this rub here.)

    Directions

    1. Trim pork tenderloin if needed
    2. Combine brewed coffee, dijon mustard, 2 tablespoons of cider vinegar in a large zip-top plastic bag; add pork.
    3. Seal and marinate in refrigerator for at least 1 hour. (I have found the longer it marinates the better it will be.)
    4. Remove pork from bag and discard leftover marinade.
    5. Mix up 1 tablespoon of cider vinegar and 1/4 cup of barbecue sauce
    6. Brush barbecue mix over pork until completely covered
    7. Generously sprinkle Adam’s steak rub over pork.

    Make sure oven is set to convection bake, and preheated to 425 degrees. Cook pork until meat thermometer reaches 160 degrees.

    Thoughts

    When the pork came out of the oven I was surprised by how wonderful it smelt. The idea of mixing coffee, dijon mustard, and barbecue sauce was a little odd even for me, but the moment I took a bite I realized I had a delicious recipe on my hands.

    You could taste each ingredient in every bite. I was surprised to find that each ingredient also complimented each other.

    The pork was juicy, and very tender. You could taste the coffee no problem, but it wasn’t over powering at all. The mustard was very light which I really liked. I don’t think I would have wanted to use any more mustard than I did. The barbecue sauce was like the icing on a cake. Together these ingredients created a flavor that I never thought would taste good when combined

    Honestly, if I was rating this, I’d give it a 5 out 5 no problem. Now I just wished I had made more than I did.
