A Fun Approach To Chemex Brewing

    First off, hats off to the guys at Verve Coffee Roasters for this awesome Chemex how to video.

    I have had a ton of trouble when it came to brewing with the Chemex. I am not sure what the deal was but I’ve just never been able to get decent coffee from it until now. By following the above video minus the stirring I was able to get get some great results for the first time since I got my Chemex over 6 months ago.

    Who knew that dancing around to Biggie Smalls would result in great tasting coffee. ;)

    QOTD: What method are you using with your Chemex? Did you come up with your own method or did you grab some instructions of the internet?

    Jamie, Best way I know to use the Chemex is to toss the filters and use a KONE. Chemex filters have to be the worst addition to the coffee experience I have encountered. YMMV. Dave

      I own a KONE, but haven’t had a chance to play with it much. I think I should get on that soon. :)

        I wouldn’t discount the Chemex paper filters. It produces one of the cleanest cups next to a syphon pot and can be remarkably good. The Kone is a different brewing method all together. No swirling, just keep a controlled pour in the center to reduce fines from passing though. I get barely any visible sediment in my cup this way. Coava has a few tutorials on their site.

          Thanks Brian! Should I use a coarser grind than I would for the paper filters in the Chemex? The few times I did use the KONE I noticed a lot of sediment. I’ll check out Coava’s site for those tutorials.

            Actually you should use a finer grind. It sounds counter intuitive, but it works. You should also just pour steady into the center. All the swirling of circles increases the amount of sediment that’s pushed through the filter. I have very little sediment in my cup when I use the Kone.

            I’m going to mess around with the KONE today. The finer grind size is starting to make more sense to me after reading an article about the KONE on serious eats this morning.

    I love the Chemex – always have. Its what I use when I want to show off a coffee and what it can bring to the table in a clean, crisp sort of way. I have a tried and true method of use that consistently gives me the cup I’m looking for but, as with all manual brewing, I am always looking for a better way. I’ve watched a lot of video but totally agree that this is one of the best out there. Thanks for sharing it – makes me smile.

      So far, I’m a huge fan of the Hario V60, but I’ve heard such raving reviews on the Chemex that I need to get into the kitchen and start working with it more.

      Glad the video made you smile. Every time I brew coffee I think of this video and it makes brewing so much more fun. ;)

    Love the video. Paid attention to the directions and brewed my Chemex today with them in mind. ( I LOVE brewing by weight and not measure. Love that tip.) Great results. I think I’d been grinding my coffee too fine and it was taking way more than 4 minutes to brew, so I adjusted the grind accordingly. I love to pull out my Chemex when I have guests but don’t want to spend 15 minutes in the kitchen heating and pouring water. I didn’t know about the KONE, thanks for the info!

      Glad to hear that you achieved great results. Be careful about grind size too because you can end up with not only it taking longer to brew, but also over extracting the coffee.
