Guatemala Antigua Pastoral Home Roast Thoughts

I haven’t had any Guatemala Antigua that I can recall so this was a nice first. What drew me to this particular crop was the word “chocolate bomb” that was in the description.That was it. There was nothing else I needed to read. The coffee was ordered, and I was anxious to get this coffee roasted.
I roasted the coffee to a nice Full City, and let it sit for a day or so. I couldn’t wait to get this coffee in the French Press, but I wanted to ensure that it rested enough so the chocolate note, or better yet “chocolate bomb” was at it’s peak.
After 5min of brewing in the French Press (I like my coffee a bit on the strong side) I couldn’t wait to dive into this.
The aroma had a mellow, but definite chocolate note, and a hint of fruitiness mixed in.
Each sip is a chocolaty goodness with a fruity or citrus note in the background. I wouldn’t call this a “chocolate bomb,” but it’s still chocolaty, and very very good.
As the coffee cools, the chocolate note becomes more pronounced, and really strikes your palate.
The coffee has a great aftertaste. The chocolate note lingers heavy on the tongue, and doesn’t seem to want to go away.
Overall, a very good coffee that gets better and better as it cools.
