Guatemala Finca La Florencia 100% Bourbon Home Roast Thoughts

I’ve been working hard on roasting this past week or so trying to figure out the Behmor. Sometimes it seems like I have it all down and then other times I don’t. It’s a trial and error cycle that keeps going around. The only batch so far that seemed to actually taste decent enough to drink was this Guatemala Finca La Florencia 100% Bourbon from Sweet Maria’s.
With notes of
Balanced Bourbon-Cultivar profile, rounded mouthfeel, almond and chocolate roast tones, tangerine brightness, malt and caramel, floral traces as it cools.

After letting the coffee rest a day I couldn’t wait any longer to dive into it. The chocolaty aroma and all around smoothness had me hoping I scored big with this batch. The coffee was good, just not as good as it could have been. There was a pronounced chocolate note that really dominated the whole cup of coffee. I am not saying that’s a bad thing, but I wish it brought a little more to the table. The coffee was smooth with a hint of brightness to it.
As a Full City roast the coffee didn’t shine like I would have hoped to. I am thinking maybe going a little lighter on the roast and see what happens.
