Home Roasting: Brazil COE Fazenda Seraozinho From Sweet Maria’s




  • I have a secret stash of COE coffees and special micro lots that I have been saving for a later time. Well, this week I thought it was time to finally break into that stash and get some of those coffees roasted up.

    My first pick out of the box was this Brazil COE Fazenda Seraozinho from Sweet Maria’s.

    This coffee is said to have

    Nutty notes, honey and bee pollen flavors, malty biscuit notes along with a dense body and a Meyer lemon finish

    After reading the label I was sold on the pollen, and malty biscuit notes. I figured this would be a very interesting coffee to review.

    Information:
    Roaster: Behmor 1600
    Profile: P3
    Roast Level: City + Maybe slightly darker

    Aroma:
    A light sweetness starts out. Digging deeper a sweet cocoa can be found. There is a hint of figs or some form of dried fruit hanging in the cup.

    Taste:
    The first sip starts with a deep chocolate that imbeds into your tongue and lingers well into the aftertaste with a spice note that jumps out at you after each sip. As the coffee starts to cool, a fruitiness starts to appear that tastes like figs or maybe dates.

    Thoughts:
    Overall, this coffee did not turn out as bad as I had expected it to be. When the first crack started I waited patiently, listening as it died down, but to my surprise after 2 minutes or so I realized it had went into the second crack or as it is called “the rolling crack.” I threw it into cool down immediately.

    Thankfully I pulled it right as it was going into the 2nd crack so I didn’t ruin it … yet

    The beans carry a nice golden brown color or a “medium roast” as some call it, but overall I was looking for a little lighter of a roast with this Brazil. I wanted to see if I could bring out some of the notes described on the bag, but I ended up with something totally different, but this coffee still ended up quite decent.

    I am a HUGE fan of Sweet Maria’s…  I tried to do an interview with them a while back, but I guess they’re too busy playing with green beans! But WOW they have an amazing selection of real top quality beans.  and some good info on roasting too.
    Sounds like you got your profile pretty good eh?  “sweet cocoa”and “a hint of figs”… sounds pretty good to me!

      No, it definitely wasn’t a bad roast, but it was darker than I intended it to be which bummed me out. I love Sweet Maria’s too. Surprised you never got in touch with them on an interview. I’d try again.

        Yeah, may do… really want to pick their brains regarding home roasting options, and a guide to buying green beans.
