Mexico Oaxaca Pluma Don Eduardo From Cast Iron Coffee Review

I wanted to find more home roasters that pan roast their coffee. There is something very special about pan roasted coffee. The small batches, and the heart and soul that goes into each batch.I found a Father/Son company called Cast Iron Coffee Co. and was ecstatic to try their coffee.
I went with Mexico Oaxaca Pluma Don Eduardo. I have never tried any coffee from the Mexican region that I can recall so I thought it was perfect.

The beans where a Medium/Dark mix, but that’s expected with pan roasting. I have found it’s hard to get an even roast when using a skillet, or a whirly pop.The aroma that came from the coffee was woody like, but mostly had a sweet mild aroma.
The taste was about the same. I noticed the woody note right away as it is quite overpowering, but not necessarily a bad thing. The coffee has a drier feeling to it. I noticed a bit of bitterness on the back of my tongue and some sweetness coming at me as well.
Overall, the coffee is very clean tasting with a pleasing aftertaste.
I’d give this coffee a 3.5 out of 5 cups.
