Recipe: Chunkalicious Coffee Bars. So Delicious Looking You Can’t Turn You Eyes Away




  • I am really feeling the urge to quote Chunk from my favorite movie, The Goonies, but I’ll refrain. If you haven’t already noticed, coffee isn’t just for drinking anymore. Especially in my kitchen where coffee has become a part of just about everything I cook because it adds a unique flavor to my dishes. Coffee is a hidden gem that not everyone has quite caught on to yet, but they will sooner or later.

    Ever since I had chocolate covered coffee beans I’ve been craving a sweet treat with coffee in it. Although, those chocolate covered coffee beans were the worst example of what you can do with coffee, they still helped my brain come up with a great recipe idea.

    This is such a simple recipe, and you can add whatever you feel like to the mix, but I just went with something simple… For now.

    So, what’s in these Chunkalicious Coffee Bars?



    Ingredients:

    - Chocolate (I used almond bark with vanilla flavor. It has a really creamy melt in your mouth texture.)

    - Dried cranberries

    - Sliced almonds

    - El Salvador Finca Monte Rey from Tonx Coffee (Fresh coffee is a MUST. Also, I wouldn’t suggest using anything darker than a medium roast to avoid a bitter flavor.)

    (Note: I eyed this so there isn’t a set amount of each ingredient. Just have fun with it, and adjust to your liking.)

    (Disclaimer: If your like me and only have a rubber mallet on hand, be careful. I didn’t realize a rubber mallet would bounce back so aggressively while trying to break chocolate.)

    Directions:

    This is the super easy part.

    1. Beat chocolate bar to a pulp

    2. Put chocolate in microwave and melt. Remember to stir every few seconds so you don’t burn the chocolate

    3. Add your preferred ingredients to the chocolate

    4. Stir

    5. Place mix on a flat tray (Don’t forget to put parchment down)

    6. Place in freezer until hard

    7. Break the chocolate up into pieces

    8. Eat your heart out

    Some people might cringe at the idea of eating whole coffee beans, but you just have to give them a chance. Coffee beans are very crunchy which even for me took me a little while to get used to, but they add such a uniqueness to this treat.

    The mixture of almonds and cranberries are a nice pair to the coffee I used. When you bite down into these bars you can taste a fruitiness from the coffee beans which mixes nicely with the dried cranberries. The chocolate itself is light, but very creamy adding a sweet, but not too sweet taste so you can’t eat these forever if you wanted to.

    This treat is so addicting that I’ve already plowed through my first batch and am contemplating my second.

    Cooking with coffee is a hit or miss kind of thing. Coffee doesn’t go good with everything. I’ve mad some seriously disgusting things. *cough* *cough* Coffee Jello which I refused to even talk about on here, but I’ve also made some delicious recipes as well. Open your mind to the idea of adding coffee to your dishes. You never know, you might come up with something as delicious as these Chunkalicious Coffee Bars.
