Review: Panama Boquete Colibri Especial From Cast Iron Coffee

I received a pleasant surprise this week. I received an email from Peter Milne who is part of the father/son company, Cast Iron Coffee. His email was to let me know that he was recently pointed to the review I had done of one of his coffees, Mexico Oaxaca Pluma Don Eduardo.I had forgotten about the review. I hopped onto the site to re-read it. After I was done reading, I felt a sense of pure embarrassment fall over me. When this review went live, I was still new to fresh coffee and writing reviews at that. One good thing that came from looking back at the review was that I’ve realized not only how much my writing has evolved when it comes to reviewing coffee, but how much my taste buds have evolved as well.
Anyways, somehow Peter was pleased with my review that he asked to send me two coffees for a review. Peter, I’ll make sure you get a much fairer review here than that first one I did.

The first of the two Peter sent me was Panama Boquete Colibri Especial. I love Panama coffees for the delicate, but juicy notes that this region of coffee brings. Also, Panama coffee has never disappointed me. I’ve had quite a few coffees from Panama and they’ve all brought something great to the table.
Here’s hoping to another great Panama.
I brewed up a cup in the Hario V60 and noticed this coffee started to scream of flowers, and citrus which flew out of the cup and under my nose. The kitchen filled with such a delicate scent that I didn’t want to move.
I waited a few minutes for the coffee to cool just enough to take that first sip. A smooth body flew over my tongue. Heaven. Underneath, I could taste a light citrus upfront, and then a delicate flowery note shoot out along with a sweet chocolate note that just hung around on my tongue. The chocolate note lingered around for awhile leaving a sweetness on my tongue.
This Panama wasn’t as big and bold as some of the other Panama coffees I have tried, but this surely did not disappoint.
I’d give this a 4.25 out of 5 cups.
